In The Kitchen: Healthy Cooking and Baking

I recently had the great honor of being the Celebrity Guest Chef in the kitchen on the fun-filled cooking TV show What’s Cooking. One thing my readers know about me– I love to eat, I can’t cook. I think that’s pretty clear, just by the way I handled that zucchini. ;)

But I had a ball, and if you’re looking for a fun, healthy, easy, recipe, check out this chocolate chip zucchini loaf below.

Amanda Knox Verdict VLOG: Did The Italian Justice System Get It Right?

Along with the rest of the world, I have been fascinated with the Amanda Knox case since day one. It had all the makings of a sensationalized media story– the beautiful American “girl next door,” goes to study in Perugia, Italy and then finds herself accused of brutally murdering her roommate in an alleged “sex-game” gone wrong involving a boyfriend.

And because of a guilty verdict four years ago, Amanda Knox and her then Italian boyfriend Raffaele Sollecito, have sat in prison since. But due to shotty police work and a real lack of DNA evidence at the crime scene, the case was appealed.

Yesterday, the verdict on that appeal was read: Amanda Knox murder conviction overturned! Her boyfriend, Raffaele Sollecito: Murder conviction overturned! They were both free to go home. The family of 21-year-old murder victim, Meredith Kercher, left in a daze, said to be still trying to figure out what happened to their daughter four years ago.

Time Management Tips: Following Through with Commitments on Limited Time

If you’re like me, your To-do list is longer than the day is long. Every morning I wake up and wonder how on earth I’m going to get everything done. Although four of my six kids (yes SIX kids) are now college age, for many years I was navigating six children’s schedules, my marriage, my writing career,  and trying to maintain friendships. Needless to say, life was a tad hectic.

I’ve come up with a few tricks of the trade to manage my time, meet my commitments, and not lose myself in the process.

Wordless Wednesday: The Giving Basket

Right now, I am working the Ford of assembly lines. You see, I am co-chairing an event next week, called Choices, that gathers 800 women strong. It’s an evening where 800 Montreal women assemble in one room, to be together, to talk, to eat, and to listen to an inspirational woman speak about her life Choices, and how those choices have impacted who she is today.

Last year we were blessed with the trailblazing Marlee Matlin. This year will be just as fabulous.

But back to assembly lines… Instead of flower centerpieces that look very beautiful, but can be wasteful at the end of the evening, we are creating “The Giving Basket.” On the center of each table, will be a beautiful basket filled with products ready to be donated to families in need. What a brilliant concept.

So today I work proudly to assemble the most beautiful centerpieces ever. I thank the donors and ‘givers’ who helped make our “Giving Basket” so special and plentiful. And I thank all the volunteers who came out today, and helped make a difference. Sometimes giving of ourselves can be difficult- giving of our time, of our resources, of our money. But no act of giving is too small. You just might change someone’s life.

When I look at my life, there are so many things that I can’t live without, that help me thrive and multi-task with greater ease. The new section will be just for that… my favorites! It’s about time. :)

It will be a section of great brands I love, products YOU have turned me onto, contests, giveaways, and more to discover. This section is for YOU.

So when Dannon approached me to help them spread the word about the launch of their new Activia French and Greek yogurts, I was excited to do so. How natural? IT’S MY EVERY MORNING BREAKFAST! And who better to kick off the new Erica’s Favorite Things than Dannon yogurt… definitely one of my favorite things!

Wordless Wednesday: Off The Fence in Maine

So my husband cannot believe that I haven’t checked in while on vacation. “Don’t you want to write a post?” he asked me.

But the truth is, beside some Twitter and Facebook updates, I have been resting my fingertips. And my brain. And just enjoying my time with my family. You never get these moments back, so I have been seizing them.

We are at the beach in Maine. I have surrendered to cottage cheese thighs, loads of ice cream, fries and wine daily, tons of New England clam chowder (my all time favorite) and lotsa lobster. I’m feeling fat and happy and free. And oh how great it feels.

So to my husband who can’t believe I haven’t written, I leave you only with a Wordless Wednesday. I think it depicts my head space in the most perfect of ways.
